I can't help it, I'm an Anglophile (I blame it on my English and Scottish background--there's an Earl in my bloodline, I swear!)
And what better way to celebrate my Anglomania than with a classic Brit drink, the Pimm's Cup? I say, it's jolly refreshing and a perfect cocktail for when I nip down to the country estate. Croquet or cricket on the lawns, anyone?
Sorry...imagining my ancestral castle again. And I don't play cricket.
Cheerio!
The Pimm's Cup
3/4 cup Pimm's No. 1
3 tablespoons fresh Meyer lemon juice or regular lemon juice
1/2 teaspoon sugar
Cucumber slices
Lemon slices
Fresh strawberries, halved
Ginger beer or Ginger Ale, chilled
Ice cubes
Place 1/2-inch-thick cucumber slices in cocktail shaker. Using muddler or handle of wooden spoon, mash well. Add Pimm's, lemon juice, and sugar. Fill 2 pilsner glasses with ice; set aside. Add ice to Pimm's mixture, cover, and shake. Strain into glasses. Push 1 lemon slice, and 2 strawberry halves down into each glass. Fill glasses with ginger beer. Garnish with cucumber spears.
